yes, I've been gone for a while.
I think I'm abandoning livejournal. but not before I record my new banana recipe formulated entirely by yours truly muahahahhaha...
*ahem*

Banana-Apple Muffins

Makes 18 muffins

Ingredients:
1/2 cup unsweetened applesauce
3/4 cup granulated sugar
2 medium eggs
3 small bananas, mashed (or 2 large)
2 teaspoons vanilla extract
2 cups white whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup lowfat vanilla yogurt (skim works too)

Directions:
Preheat oven to 400 degrees Farenheit.
Line 18 muffin wells (3 pans of 6 each, dunno the dimensions) with paper liners.
Combine applesauce, sugar, and eggs in a large bowl. Beat well.
Stir in bananas and vanilla until smooth.
Add remaining ingredients in order; stir until just mixed.
Fill each well about 2/3 full.
Bake for 15-18 minutes.
Remove from oven and cool on wire rack for 3 minutes. Remove from pan and allow to cool completely on wire rack before storing (or alternately, eat them warm).

Notes:
For extra fun, sprinkle brown sugar on top of the muffins before baking - it makes a sweet, slightly crunchy topping. Or you could make a streusel topping, but you'd have to use butter and other stuff that I was trying to avoid...

There are several reasons this recipe turned out the way it did. For one, I didn't want to use any butter or oil, and I wanted to use white whole wheat flour as it has much higher fiber than regular all-purpose flour. Actually, this turned out quite sweet, and I think I could have used 1/2 cup sugar instead of 3/4 cup...so maybe I'll try that next time. The whole reason I made these was that we had some old bananas sitting out on the counter browning smugly, since the main banana-consumer of our family, my brother, is out of town and therefore unable to consume those bananas (wow, pronoun/antecedent and verb tense confusion all the way)...

This is my weakness. This tripped me up on my diet, but I love it all the same.

I love bread of all kinds, and I love bananas. Therefore, I love banana bread. Even though I tried to make it healthier by using vegetable oil instead of butter and replacing white flour with white whole wheat flour (check it out here), it's still at heart a dessert bread.

Because I'm lazy, I formulated this recipe so that it only uses one mixing bowl (two if you count the bowl you mash bananas in) and doesn't require any electric equipment.

Banana Bread

2 cups white whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup sugar
4 very ripe bananas, mashed
1 teaspoon vanilla
½ cup vegetable oil
1 tablespoon lowfat vanilla yogurt
1 teaspoon cinnamon
2 tablespoons brown sugar

Preheat oven to 350 degrees. Grease and flour two 9x5 loaf pans.

In a large mixing bowl, beat eggs and sugar together thoroughly. Stir in mashed bananas, vanilla, oil, yogurt, and cinnamon.
Sift the flour, baking soda, baking powder, and salt directly into the mixing bowl, about a third at a time. Stir until just combined.
Stir in mashed bananas, vanilla, oil, yogurt, and cinnamon. Stir in flour mixture, a third at a time, until just combined. Batter should be quite thick.

Divide batter into loaf pans. Sprinkle brown sugar on top.

Bake for about 50 minutes to 1 hour, rotating once.

Notes:
Since bananas come in different sizes (duh), adjust the amount of yogurt to compensate - if the bananas are on the smaller size, you may add up to 1/4 cup yogurt; if the bananas are large, don't add any. In general, this recipe is quite forgiving.
I mash my bananas with a fork, so small banana chunks show up in the bread. If you dislike this, feel free to puree your bananas in a blender or whatnot.
Instead of greasing and flouring the loaf pans, you line them with parchment paper. This is a surefire way to get a clean release, but usually I'm too lazy to do this.
White sugar can be replaced by brown; just be sure not to pack the brown sugar, as the resulting bread will be too sweet.

I haven't exercised today. I need to do like 4 miles and then not eat dinner. but my brother is making potstickers from scratch and he's a fabulous cook (especially for a teenage guy!) and I will end up eating a prodigious amount, I know.
My toilet is finally clean for once (mostly. there's nasty stuff growing in it that I've tried to kill with Lysol and bleach repeatedly - not together, duh - but it comes back. probably because I purge in it so much) and I'm planning on making it gross again.
